thai coconut milk chaokoh 5.6 oz, price around $0.89___________ hot curried meat open a can of thai coconut milk use a tbsp to dip out the thick top=gelled together part of the coconut milk into a frying pan leave the thin liquid coconut milk at the bottom in the can for later=last part of this recipe add 1-2 tbsp of thai green curry (or use thai red curry if preferred) stir ingredients together while frying on low heat for around 10-15 minutes after some of the oil=oily look is cooked out of the curry then add sliced meat=can use beef or chicken stir meat in curry and cook just long enough to get the red out of the meat the less time you cook the meat the more tender it will be when it is added to the sliced bamboo shoot soup part of this recipe hot curried meat with sliced bamboo shoots pour your curried meat out of the frying pan and into a boiling pot add the thin liquid coconut milk at the bottom in the can left over from curried meat recipe add one drained can of sliced bamboo shoots and 1-2 cups of water add a little sprinkle of msg accent if you want and definitely add fish sauce you do not have to but you can add thai lemon leaves or kaffir lime leaves for more thai flavor (later remove them because you can not eat either of these leaves) boil all these ingredients together for 15-20 minutes or until bamboo shoots are tender enough you can also use small round egg plants in place of bamboo shoots in this recipe if you want
the curry is spicy hot so serve with cooked rice i like white rice the best with thai food it just taste better and with more flavor to me than brown rice does i do not like brown rice with thai food spicy flavorful thai food makes brown rice taste too plain

thai food ingredientsfish sauce, squid brand 25 oz bottleimportfood.com/sasq2501.html________________ coconut milk coconut trees thrive in thailand’s tropical climate, and the thai people have learned to make full use of this natural resource. from its fruit to its fronds, in thailand every part of the coconut tree is of value. but in thai cuisine, it is mainly the milk that is featured. coconut milk is used as a sauce and thickener, or simply added in order to give a coconut flavor to soups, curries, noodles, vegetables, fish and meat dishes, as well as deserts. though authentic thai chefs use milk wrung out of fresh, ripe coconut flesh, canned coconut milk may be purchased as an excellent substitute. for good quality and flavor, look for ‘thick’ as opposed to ‘thin’ coconut milk (‘thick’ is obtained from a first pressing, while ‘thin’ is produced from further squeezings).
kaffir lime is a dark green fruit distinctly different from the limes we commonly see in north america, easily distinguished by its knobby skin. in thai cuisine, it is mainly the leaves that are used, adding a unique lime flavor to soups and sauces. these leaves are available at most asian specialty stores, and can be purchased either dried or frozen.
coriander (also called cilantro or chinese parsley) is a herb commonly found in thai cuisine. all parts of the coriander plant are used, including the root, stem, leaves, and even the seeds (both whole and crushed).
lemongrass provides a fragrant and distinct lemon flavor to many thai dishes. chefs use the lower, bulbous part of the lemongrass stock, usually pounding or crushing it first before adding it to spice pastes that form the basis of many fish and noodle dishes, as well as salads. whole bruised lemongrass stocks, cut into lengths of three or four inches, are often added to soups and then removed just before serving.
galangal is a type of ginger used in the thai kitchen as well as other southeast-asian cuisines. also referred to as siamese ginger, it has a slightly milder taste than the north american variety, and can be distinguished by its reddish skin. look for galangal at your local asian market (fresh or frozen) or grocery store.thaifood.about.com/od/thaicookingessentials/a/date_article_2.htm

it is called the import food store yet since i only buy thai food there i call it the thai store they have alot of thai spices they have lemon, lime, mint leaves one of my favorite thai leaves is called holy basil leaves at the thai store they are hot leaves though
i pick my lemon leaves off of a thai lemon tree plant yet it is kind of a dangerous plant because it grows tall bryered stems i wear gloves when i pick lemon leaves off to keep from gettting stuck by the bryers you can buy a plastic bag of thai lemon leaves at the thai store you are not suppose to eat any of these thai leaves they are just for flavor once while i was eating curried meat with eggplants a mint leave stuck to an eggplant and i accidentally ate the mint leaf it just came out whole the next day when i used the bathroom i was suprised it was still whole just like new lol my stomach did not digest it any at all
thai people call msg accent and thai people put msg=accent and fish sauce in every recipe

well i cooked lemon grass chicken soup tonight for dinner i have a full stomach now so i will write the recipe on here lemon grass chicken soup buy a pack of chicken wings set the chicken wings one at a time on a cuttting board and use a sharp cleaver to chop the chicken wings in half thai people usually chop them into three peices yet i do not like my chicken pieces too small so i just chop each chicken wing in half
boil a half pot of water with lemon grass in it for 15-30 minutes then drop the pieces of chicken wings into it add accent and fish sauce and boil it for around 20-30 more minutes it is a good lemon chicken soup you can not eat the lemon grass stalks so you can remove them out of the pot if you want especially if you have children so they do not accidentally eat them
serve with cooked white rice you can buy the lemon grass at the thai store it comes shaped in hard dry stalks about the size of asparagus spears yet it is clear yellowish not green yet it turns the color green after it is cooked
if you do not want to mess with chopping chicken wings you can use whole pieces of chicken in this recipe like example whole thighs

oh that reminds me since i was a little nausea this morning i made a small pot of egg drop soup egg drop soup is what i often eat when i am sick or after surgeries egg drop soup * boil a small pot of chicken broth either broth leftover from chicken or canned chicken broth * add a little accent and fish sauce to the chicken broth * crack two or three eggs into a small bowl * add a little accent and fish sauce to the eggs do not stir the eggs any while they are in the bowl * use a small spoon and just stab the eggs three or four times * when the broth is real hot and boiling good dump all the eggs into the hot broth * use a fork to stir the eggs a little in the broth * cook 3-5 minutes * take the pot off the burner, let it cool some and eat it
sometimes you can add sliced green onions or other stuff for extra flavor to this recipe
egg drop soup cured nausea or illness feelings in me especially right after i got out of the hospital after a surgery or a colonoscopy

some of my friends went fishing and gave me some flounders i know most people clean fish outside yet since i have 2 dogs and grandchildren that come and visit me i do not want fish scales in my yard i scaled these fish inside the sink good thing i have deep sinks because only a little bit of the scales got on the counter * scale fish=scrape all the fish scales off the fish skin with a knife * cut the fish stomach and clean all the fish guts out of the fish stomach and run water over all the fish including inside guts to rinse fish clean * dip the fish in stirred up egg yolk * dip the fish in white cornmeal (sometimes i use yellow cornmeal) * let the grease get hot in the frying pan * drop the fish in to fry cook fish good and brown - the browner the crispier hot thai fish topping if you have a pestal like i have you can beat garlic and peppers in it if you do not have a pestal * on the cutting board peel, crush, and slice up 5 pieces of a fesh garlic clove * on the cutting board slice up 5 thai chili peppers and throw away their stems * put a small amount of grease in a frying pan * dump garlic and thai chili peppers into the grease and stir while frying for just a second * when it is good and hot and smoking with strong fumes that almost burn your eyes add 1 cup of water * add a little accent and fish sauce * add alot of thai black soy sauce and stir it into the water alot in the frying pan * remove frying pan from burner, let cool and use this sauce to pour over top of the cooked fish before serving this thai fish topping is hot from the thai chili peppers * serve with cooked white rice
fryed fish really taste the best deep fryed in one of those butane gas deep fryers yet i do not always feel like getting it out of the garage and firing it up to deep fry everytime, only sometimes and usually on a weekend

one of my friends kept telling me that i eat white rice too much once he gave me a bag of brown rice and told me it was healthier for me
so for about 8 years straight i stopped eating white rice and thai food and started eating american food again and i gained weight now that for 2 years straight i have been back to eating white rice and thai food alot again i have lost weight and most of my pants are loose now and falling off me white rice and thai food helps keeps me and asians a little bit skinnier and i need that because my prednisone steriod medicine makes me fatter yet stronger those steriods really do make me stronger once right after hurricane fran my doctor gave me two 100size needles of steriod shots when i went home i saw about 6 of my neighbors trying to lift a big boat off of the top of a car (from hurricane fran) they could not lift it and gave up and walked off back toward their homes i walked over there and lifted the big boat off the top of the car all by myself most of my neighbors had walked off and went back home yet the man that owned the boat was so amazed when he saw me lift that big boat off the top of that car all by myself he ran up to me and said how did you do that i told him because i just got back from the doctors office and the doctor gave me 2 big steriod shots lol those 2 big steriod shots made me stronger like the incredible haulk that day
i do not take steriods just to make me stronger than others though because of my stomach problems sometimes i have to take steriods just to stay alive
